Oooo I made cheesy beef mince quesadillas for tea (supper) tonight and my housemate who isn't gluten-free said it was really nice and gets the thumbs up for making it again in the near future. Quick and easy, after a long day toiling / fixing stuff in the house (lockdown rules).
Please excuse terrible photo - forgot to take it before I started eating mine... It was that good. Plus salad side was just simple - cucumber, red onion, tomato wedges and lettuce.
Recipe I used and adapted for gluten-free - you can use normal wheat flour tortillas if you're not allergic to it (like I am)
250 g minced beef
1 clove garlic, finely grated or crushed
1 onion, diced
1 green/yellow pepper, sliced (you can add red, yellow and green for colour variety)
1 packet El Paso Taco Seasoning (Sweet Paprika & Garlic)
2 tsp tomato pureé (we used chilli tomato paste)
Half a can of black beans, rinsed and drained
4 tsp rapeseed oil
6 El Paso GF Tortillas
225g grated cheddar (we mixed 3 different types of cheese grated into a bowl)
salt / black pepper to taste
1 avocado, pitted and diced - optional
1 tbsp chopped fresh coriander - optional
1 lime, cut into wedges - optional
Sour cream, for serving - optional

PS: He's not a fan of avocado and we didn't have any fresh coriander, lime, salsa or sour cream so we both compromised and went without - used Hellmann's Real Mayonnaise instead.
