No xanthan gum? I find it helps bind the flour and make it just like a normal glutenly doughTasted great.
500g gluten free flour
400ml water
10g yeast
teaspoon olive oil
let yeast soak in warm water for 10min
mix into flour
leave dough ball for 20min to rest
make rolls
place on pizza stone in 200C oven for 20 min
done

Yeah I was going to say, if the gluten is just removed, then your bread will be a solid lump. Most likely bec it’s in all gluten-free bread flour
Sadly, I have a serious allergy to gluten and preservatives - hence going gluten free. Last week I had an IPA and had to wait 3 days to see if I was allergic to it (it says barley with the gluten removed and some coeliacs have reported sensitivity to it). So far, I'm good with it so I guess I got lucky there.Yeah I was going to say, if the gluten is just removed, then your bread will be a solid lump.
@satanboy have you tried sourdough? I am under the impression that the fermentation aids digestion of the gluten for those who are intolerant.
I love sourdough....but it doesn't like me.Yeah I was going to say, if the gluten is just removed, then your bread will be a solid lump.

This doesn't taste good if you leave it over for the next day. I need to create my own gluten-free flour.Maybe my flour already contains it.
