Eventually you piss off an @ and get banned so you go looking for a new server.

You join a server. A server is a collection of different channels. It's like IRC of old but it's secure, and it's what Gen Y and Gen Z use these days.
I have one of my own servers and I am in one of the medium sized Sonic servers:
